Chicken Tinga Tamales

fresh masa tamales filled with chicken tinga and oaxaca & jack cheese served with choice of red or green sauce
MICROWAVE INSTRUCTIONS
- Place sauce, or sauces in a pot or pots and put a burner on medium high heat.
- Bring to a simmer and then reduce heat to low-medium low.
- Place tamales in a microwave and cook for 2 to 2.5 minutes.
- Unwrap tamales and place on a plate, careful as they will be hot.
- Top with sauce and cotija cheese.
INSTANT POT INSTRUCTIONS
- Place steamer rack in your instant pot and add 2 cups water.
- Place tamales in the instant pot standing up with the filling facing up.
- Seal the instant pot and use the manual setting to set cooking time to 5 minutes.
- Meanwhile place sauce, or sauces in a pot or pots and put a burner on medium high heat.
- Bring to a simmer and then reduce heat to low-medium low.
- When timer goes off on the instant pot, release the pressure.
- Remove tamales, careful as they will be hot.
- Unwrap tamales and place on a plate, careful as they will be hot.
- Top with sauce and cotija cheese.
STEAMER INSTRUCTIONS
- Set up your steamer as you normally would.
- Place tamales in steamer and cook for 15-20 minutes.
- Meanwhile place sauce, or sauces in a pot or pots and put a burner on medium high heat.
- Bring to a simmer and then reduce heat to low-medium low.
- Remove tamales, careful as they will be hot.
- Unwrap tamales and place on a plate, careful as they will be hot.
- Top with sauce and cotija cheese.
OVEN INSTRUCTIONS
- Preheat oven to 400 degrees.
- Meanwhile tightly wrap each tamale in foil.
- Place tamales on a sheet tray and place in the oven.
- Set a timer for 20 minutes.
- Bring to a simmer and then reduce heat to low-medium low.
- Remove tamales, careful as they will be hot.
- Unwrap tamales and place on a plate, careful as they will be hot.
- Top with sauce and cotija cheese.
